Last month, I attended a conference called Startup Grind. I met some of the most amazing people while I was there. People flew in from all over the world to attend this conference.  Specifically, there was a gentleman there with an organization called Enterprise Ireland.

The whole idea behind this is to repatriate Ireland with brilliant ideas and people to help the country grow and prosper. There is an amazing program to support new businesses and they even teach you how to be Irish!  I talked to him about the program and he assured me that not only could he teach me to talk with that wonderful Irish lilt, but that he could teach my husband to dress like all those rakish Irishmen. I thought, “I am sold!”

Now you might be wondering what this has to do with coffee.

See, the business has to be Irish and coffee can’t really be grown in Ireland. At least not now, but that’s a different topic.

But how do I make a Colombian coffee business a wee bit Irish…?

 

And then, I had a brilliant idea! Why not start sneaking coffee into everything?  I mean, they already drink Irish coffee. Why not coffee bread and coffee beer?  These are common foods and if I slowly start introducing coffee into Irish staples, voila!  Suddenly coffee becomes a mainstay , an IRISH mainstay and hence we become Irish.

In honor of this new initiative for Coffee of Origin, I give you:  Coffee Corned Beef.  It was developed by a trained chef and it’s just in time for St. Paddy’s Day.  (Don’t I sound more Irish already?) Of course, it turns out best if you make it with Coffee of Origin.

Coffee of Origin Corned Beef

 

1-2 cups of Coffee of Origin (whatever you were able to keep yourself from finishing the day before)

3 lbs corned beef

2 Porters (beer)

Salt and pepper to taste

3-4 tbs of brown sugar

 

Bring all of it to a boil in a covered pot. Then turn down the heat to medium low and cook for one hour per pound.  Flip the meat once halfway through cooking and you’re all set to enjoy a delicious St. Patrick’s Day meal with an extra little jig in it.
